Are the conversions exact?

The volume-to-volume conversions (such as tablespoons to millilitres) use exact internationally-defined factors. The volume-to-weight conversions are good working approximations based on average ingredient densities. Real densities vary with how tightly a dry ingredient is packed, the brand, temperature and humidity, so weigh critical amounts on a kitchen scale when precision matters.

What is a cup in millilitres?

The US legal cup is defined as exactly 240 ml. The US customary cup is 236.588 ml (approximately 237 ml). This tool uses the US customary cup (236.6 ml), which matches most recipe standards. The metric cup (used in Australia and Canada) is 250 ml.

How is oven temperature converted?
